Gaia Wild Ferment Assyrtiko 2022

Gaia Wild Ferment Assyrtiko 2022 is a full-bodied dry white wine produced from the Assyrtiko grape variety on the Greek island of Santorini. Operating from wineries in the Peleponnese and the island of Santorini, Gaia is one of the most forward-thinking wine producers to have emerged from Greece in the last two decades, specialising in precisely made wines which express the typicity and terroir of indigenous Greek grape varieties. Gaia`s 2022 Wild Ferment Assyrtiko is fermented with indigenous yeasts and matured in a mixture of stainless steel, French oak, American oak and acacia barrels. This is a prime example of the high-acid Assyrtiko grape variety from the volcanic terroir of Santorini. Hugely complex with notes of salted lemon, white nectarine, wild flowers and gunflint.
