Coming from Cambridge, I started my career by working fellow’s events at King’s College. There, I was exposed to an extraordinary cellar bursting with wine legends. This sparked my love for wine and the industry. I moved into hospitality and my interest in spirits was born the night when the entire bar team walked out and I found myself alone with a cocktail recipe book.

After I survived the night, I found a love of learning about wine and spirits in my own time and knew it was what I wanted to do. I moved to a leading independent wine merchant for several years before deciding to take the plunge and move to London to up my game and work in fine wine. In seeking counsel from my mentor in wine, he told me that if I was going to aim for London, then I should aim for the best – Hedonism.

I have a big love for all agave spirits. I love the complexity and diversity within the range of mezcals; not only are there different species but different families that each bring something different to the bottle. I find that the unaged spirits are astonishingly complex, bringing to light the skill and expertise of not only the distillers but also the farmers in the field to bring the terroir and the agave together harmoniously.

Since moving to London, I find myself searching for the best pub roast. When I’m not studying for my certifications, I can be found playing guitar or cooking at home. I’ve also developed a love of board games and regularly meet with friends for wine, mezcal and Catan.
