Fortaleza is a family-run business run by Guillermo Sauza, whose family has played a central role in the production and popularisation of Tequila worldwide. Guillermo’s great-great grandfather, Don Cenobio, was the not only the first Tequila producer to export to the US, he also pioneered the use of steam to cook the agave (instead of an earthen pit) used to make the spirit, and was the first to recognise that blue agave yielded the best results.

Fifth-generation Guillermo Sauza got Destileria La Fortaleza up and running again, making tequila in the same way it was made over 100 years ago – with a small brick oven to cook the agave, a tahona to squeeze the juices out of the agave, wood tanks for fermentation, and the distillery’s two original copper pots for distillation.
