Cathar(tic) is a small, boutique winery based in the Languedoc-Roussillon. It was founded by Richard Bray, a British expatriate who fell in love with the region and its winemaking potential. The winery focuses on using organic and sustainable practices in the vineyard, which often means minimal intervention in both the vineyard and the cellar. ‘Fool Me Twice’ is a Grenache Gris that was fermented on its skins and then pressed by foot. The colour is not especially orange, but fairly light in colour, with firm fruit and a streak of tannins.
