Founded back in 1804 by the Tsuji family, Tsuji Honten is now run by seventh-generation brother and sister team, Soichiro & Maiko Tsuji. They are pioneers in the use of omachi rice and the ancient bodaimoto brewing technique. Mountain Fortress is a sweeter style of sake, but well-balanced and full of finesse. Its natural acidity offsets the residual sugar, and there are plenty of umami notes that pair perfectly with mature cheeses and charcuterie.
