A Burgundian tradition, Burgundy Marcs were once for private consumption only, distilled by those privileged by Napoleon`s decree for vine or orchard owners. Philippe Pacalet revived this tradition, distilling stems from Premier and Grand Cru parcels of Côte de Beaune and Côte de Nuits since 2015. Pinot Noir stems are copper-still distilled after whole bunch winemaking, then matured for 4-5 years in a used white wine oak barrel. His Marc de Bourgogne boasts an amber hue, complex nose of fruity and floral notes, and a palate progressing from roundness to tension, delivering a rich, concentrated, and aromatic profile.
