The Baga grapes for this wine come from very old vines [over 90 years old]. They are fermented for 5 to 8 days in open vats without destemming (the berries are not removed from the bunch). Then, there is a manual punching down of the cap several times a day until the desired intensity is achieved. Afterward, the wine finishes fermentation in old wooden casks. While it rests, it is clarified and ages in the same casks for about 18 months. It is bottled without any fining or filtration. All these processes are done manually. This wine is only produced in years of exceptional quality.
