Originally established in 1890, Domaine Simon Bize is one of the finest producers in Savigny-lès-Beaune, producing both white and red Burgundy. Their holdings are, with minor exceptions, entirely within the Savigny AOC. This release comes from their 1.60-hectare plot in ‘Aux Vergelesses’, a Savigny-lès-Beaune Premier Cru. The domaine still tries to avoid any influence of new oak on the reds, and just a little with the whites.
