Ramiro Ibáñez is the passionate winemaker at Cota 45, dedicated to revitalizing traditions and showcasing the distinct terroir of Jerez. This particular release comprises 100% Palomino grapes sourced from two vineyards located in Paganilla, situated approximately 9 kilometres from the ocean. These vineyards feature hard soils, leading to increased stress on the vines and smaller grapes with heightened phenolic content. Expect notes of green apple, citrus, and saline minerality, underscored by lively acidity and a prolonged, enduring finish.
