Discover Sake


Thursday, 23rd May 2019, 6.30 - 8.30pm

Another superb tasting from House of Sake's Honami Matsumoto. This tasting will introduce guests to many of the unique production techniques associated with traditional sake-making.

Brews to be tasted on the evening include Keigetsu Aikawahomare Yamahai Junmai, Hanatomoe Mizumoto Muroka Nama Genshu, Urakasumi Zen Junmai Ginjo, Furosen Wataribune Junmai Ginjo, Banzaimon Junmai Daiginjo & Keigetsu Sake Nature Kimoto Junmai Daiginjo.

Along with Honami, we are delighted to welcome David Harvey of Raeburn Fine Wines to co-host this fantastic tasting. David is considered one of the UK's leading authorities on biodynamic & natural winemaking & also oversees the import of many fine Japanese sakes. Guests will enjoy a variety of food pairings with their sake including artisanal cheese, cured meats & patisseries.

This tasting is £45, with £15 redeemable against any purchase of sake on the evening of the tasting.

Champagne Taittinger

Castellare & Rocca di Frassinello

The Castellare di Castellina estate covers around 80 hectares in the very heart of the Chianti region. The vineyards are managed using organic farming methods & with a focus on biodiversity - around 20 of their 80 hectares are dedicated to the cultivation of olives which goes to make their superb Olionovo.

Head winemaker at Catellare, Alessandro Cellai uses only indigenous varieties to craft his classically-styled Chianti that is eminently approachable & fruit forward. The wines are generally aged in French oak barriques for a period before bottling with their flagship Chianti I Sodi di S. Niccolò resting for 30 months in barrel before release.

Alongside holdings in Chianti, Castellare also have a property on the Tuscan coast in Maremma - Rocca Di Frassinello. Here the team produce two wines in the Super Tuscan mould - Rocca Di Frassinello, which is a blend of Merlot, Cabernet Sauvignon & Sangioveto & Baffonero, which is 100% Merlot. The estate is a creative collaboration between Castellare & Domaines Barons de Rothschild

We are pleased to welcome Roberto Cremonese to the store to host this fantastic tasting. Roberto will present seven wines including Chianti Classico Il Poggiale 2016, I Sodi San Niccolò 2015, Rocca di Frassinello 2008, 2011, 2013 & 2015 & Baffonero 2015.

Château de Ferrand

Château de Ferrand is a Grand Cru Classé Saint-Emilion whose vineyards are located on the outer edge of the appellation's famous limestone plateau.  An assemblage of 75% Merlot, 10% Cabernet Franc & 10% Cabernet Sauvignon, the wine spends around 15 months in oak before bottling of which around 60% are new barrels.

We welcome Philippe Chandon-Moët to Hedonism Wines to host this tasting. Along with his wife Pauline, Philippe co-runs the estate & takes an interest in every aspect of the production - from vineyard management to bottling.

Guest will enjoy six vintages of Château de Ferrand featuring 2008, 2009, 2010, 2012, 2014 & 2015. This is set to be a fascinating vertical tasting of a well-regarded Saint-Emilion estate

Cantina Terlano

Founded in 1893, Cantina Terlano winery is now one of the leading wine growers’ cooperatives in South Tyrol, with a current membership of 143 growers working a total area of 190 hectares.

The winery is rightly praised for the superb quality of their white wines, which make up around 70% of total production. Their complex, balanced single varietal & blended bottlings have gained near perfect scores from James Suckling & The Wine Advocate & their extensive library of older vintages make Terlano one of the most exciting producers currently working in Northern Italy.

Terlano's-own Klaus Gasser will present seven wines including Pinot Bianco Vorberg Riserva 2010 & 2016, Sauvignon Quarz 2013 & 2017, Il Primo Grande Cuvée 2016, Rarita 1991 & Terlano Sauvignon Blanc 1961.

Vega Sicilia


Monday, 17th June 2019, 6.30 - 8.30pm

A producer that needs little introduction - Vega Sicilia is considered by many to be Spain's finest winery. Unusually for Ribera del Duero, the vineyards are home not only to the local Tempranillo grape, but also to the Bordeaux varietal of Cabernet Sauvignon. Once vinified, this unusual assemblage is then aged in oak for as long as 10 years before release.

We are delighted to welcome Vega Sicilia's-own Zita Rojkovich to the store to hosting this tasting. Zita will discuss the fascinating history of this most famous Spanish estate & also pour & discuss the wines to be sampled on the evening.

Guests will enjoy a tasting of Alion 2015, Valbuena 2014, Reserva Especial multi-vintage blend 2016 release & Único 2009 & 1973. Alongside these superb reds, guests will also enjoy two fantastic wines from Tokay-Oremus - the dry Tokay Mandolas 2017 & a magnificent Tokaji Azsú 5 Puttonyos from the 1972 vintage.

Henriot Dinner

Hedonism Wines & Hide are delighted to welcome Henriot’s multi award winning Chef de Cave, Laurent Fresnet, to host an unmissable dinner for Champagne connoisseurs. Henriot has been renowned as one of the finest producers of Chardonnay-dominant Champagnes since 1808 when Apolline, the widow of Nicolas Henriot, founded the House & spread its reputation to the grandest royal courts of Europe.

Henriot incorporates an exceptionally high proportion of Premiers & Grand Crus within its cuvees & guests will enjoy some of the best available from a broad spectrum of vintages. Cuvèe Enchanteleurs 1996, Cuvèe Hemera 2005 & Vintage Rosé 2008 will be served with dinner, following a reception of the exceptional Blanc de Blancs 2008.

Ollie Dabbous has again created a bespoke menu of Michelin-starred dishes to match these extraordinary champagnes. Delicious canapés with be followed by beef tartare with alliums & tarragon, glazed eel with cucumber & prickly ash followed by roast Limousin veal & summer vegetables; with each elegant dish complimenting the delicate flavours of the Champagne, as well as the best seasonal produce available as we finally move into summer. Hide’s signature Baked Alaska will finish the evening alongside Henriot Demi-Sec NV.

Guigal Dinner

The Guigal family are pioneers of modern winemaking in Rhône Valley. From their superb village level Côtes-du-Rhône Rouge & Blanc all their up to their legendary single vineyard Côte-Rotie, the wines are of the highest quality across the board. We are delighted to be collaborating with our sister project Hide on yet another superb wine dinner focusing solely on the wines of this prestigious producer. The meal & tasting will be hosted by Guigal's-own Brett Clivendon who will guide guests through a flight of phenomenal reds & whites.  We hope you can join us what is certain to be a exciting evening of fine wine & Michelin-starred food.

Guests will enjoy Condrieu 2017 paired a selection of canapés including crispy cod skins with tarama, radish & nasturtium & Romaine lettuce with Sussex Slipcote & crushed green herbs; Saint-Joseph Blanc 2017 & Saint-Joseph "Lieu Dit" Blanc 2017 paired with hand-picked crab, sea lettuce & a chilled lime leaf broth; Saint-Joseph Rouge "Vignes de L'Hospice" 2015 & Hermitage Rouge 2015 paired with roast Herdwick lamb, smoked cockles, baked turnip & a nasturtium dressing; Côte-Rotie "Brune et Blonde" 2015 & Château d'Ampuis 2015 paired with barbequed squab pigeon with black pepper & confit tamarillo before the meal concludes with Côte-Rotie La Turque 2013 served with a selection of artisan cheeses.
