Assyrtiko is a white grape variety that is primarily grown on the Greek island of Santorini. It is believed to be one of the oldest grape varieties in the world, with a history dating back more than 3,000 years. Assyrtiko is highly prized for its ability to produce wines with a distinct minerality, high acidity, and strong citrus and stone fruit flavours. The unique terroir of Santorini, with its volcanic soil, hot and dry climate, and sea breeze, provides the ideal growing conditions for Assyrtiko. The grape is highly resistant to the harsh conditions of the island, including drought, strong winds, and intense sunlight.

In terms of tasting notes, Assyrtiko wines are typically light-bodied with high acidity and a crisp, mineral finish. The flavour profile can vary depending on the style of wine, but often includes citrus notes such as lemon and grapefruit, as well as stone fruit flavours like peach and apricot. Some Assyrtiko wines may also have a subtle hint of smokiness, which is a result of the volcanic soil on which the grapes are grown.
