The Darling Cinsault hails from dry-farmed bush vines planted in 1978. After undergoing a gentle basket pressing, the Cinsault grapes, which include 15% whole clusters, age in old oak for 11 months, allowing the flavours of red plum, raspberry, and cherries to radiate. The wine boasts nervy energy, a chew of tannins, and a deep salt tang at its core.
