Gaia Thalassitis Assyrtiko 2022 is a full-bodied white wine produced from Assyrtiko grapes on the Greek island of Santorini. Assyrtiko is a grape variety native to the volcanic island of Santorini and which is renowned retaining high acidity in very hot climatic conditions. This wine uses Assyrtiko very low-yielding grapes growing in the villages of Episkopi, Akrotiri and Pyrgos. It was matured for four months on lees in stainless steel tanks with frequent bâtonnage. Chablis-like with vibrant, creamy lemon notes and a fine mineral core.
